Colossal Salad

This health food powerhouse will give you an undeniable energy boost. Fruits, veggies, seeds, and nuts combine to form a delicious rainbow that just happens to be edible. Gluten-free and vegan.

Ingredients

    8 pitted kalamata olives
    ¼ cup dried cherries (unsweetened & unsulfured)
    2 tbsp. chia seeds
    1 tbsp. hemp seeds (shelled & raw)
    ½ cup almonds (diced & raw)
    ¼ cup sunflower seeds (raw)
    1 granny smith or pink lady apple
    10 grape or cherry tomatoes
    1 medium cucumber
    ½ red onion
    ½ yellow bell pepper
    ½ orange bell pepper
    ½ red bell pepper
    1 medium carrot
    3 tbsp. extra virgin olive oil
    1 tbsp. lemon juice
    Cracked black pepper (to taste)
    Himalayan pink salt or sea salt (to taste)
    Dried Oregano (to taste)
    1 tsp. garlic powder


Tips

  • Try to get organic for most, if not all of these ingredients.
  • Are you a fan of croutons? Add crushed organic blue corn tortilla chips instead.
  • Feel free to add, subtract and/or replace ingredients.
  • Eat this at least once a week and your body will thank you.

Directions

 1  Crush, cut, dice, slice everything up, and toss it around in a bowl with spices, olive oil, and lemon juice.

 2  Enjoy! There isn’t much else to it. 🙂
